Easy, Delicious Chocolate Cake!

Hello Friends! I have so many recipes I want to share with you all and I am glad that the very first one is this delicious chocolate cake that we make all the time over here. My kids love helping me in the kitchen, and I love baking with them. I remember when I was a child, and even as a teenager, my Mom would rarely let me help her, and every opportunity I had to be alone at home, I would bake a cake and hide from my Mom. Of course, she always found out as there was no way to hide the smell of baked cakes :)

Let’s move on to what matters here, which is this yummy recipe:

Dough Ingredients:

1 cup of unsweetened chocolate powder

1 cup of sugar (I usually use sugar cane sugar or coconut sugar)

2 cups of unbleached flour

1 cup of oil (I usually use Sunflower oil from Trader Joe’s)

3 eggs

1 cup of hot water

1 tbs of baking powder

Preparation:

In a medium size bowl, mix the chocolate powder and sugar. Once mixed, add the egg yolks and oil. Next, add water, little-by-little, followed by the flour and baking powder. Lastly, add the whipped egg whites. I use a KitchenAid to beat the eggs, but you can use a hand mixer too. Once its all mixed, make sure your baking pan is greased and sprinkled with flour. I use the coconut oil spray from Trader Joe’s. It’s the best for greasing baking pans.

Pour in a baking pan, I like the bundt one for this cake, but I have used square or rectangle ones and they work just fine too.

Bake in 350°F for 35 to 40 minutes. Let it cool down before flipping the cake to a plate.

Topping:

1 can of condensed milk

2 tbs of butter

1/2 cup of bitter-sweet chocolate chips (I love the Ghirardelli one)

1 can of media cream from Nestle or 1 cup of heavy whipping cream

In a saucer pan on the stove, medium heat, add the butter, condensed milk and the chocolate chips. Let it cook for about 5-7 minutes, or once you see that it’s getting a bit tick (my reference point is when you run your spatula or wooden spoon around the pan or in the middle of the mixture and it takes a while for there mixture to move back together) remove from the stove and add the media cream or heavy whipping cream. Mix well and pour over the cake! Lastly, Enjoy friends!
